This Zucchini Hummus is really simple to make. Just throw all of the ingredients in the blender and voila!
And bonus….. if you are on the Standard Process Purification 21 Day Cleanse…… this really helps eat all those raw veggies! You can use store bought tahini in the cleanse (as long as it’s only sesame seeds (plus oil in some)) or make your own. It’s really easy if you have access to bulk sesame seeds (I got a 2 lb bag on Amazon). Details on how to do this are in the notes of the recipe below.

Easy Zucchini Hummus

HOMEMADE TAHINI: Pour 2 cups of raw sesame seeds on a shallow baking sheet. Heat oven to 350 and roast 7-10 minutes. Shaking the pan a few times. Do not let them brown! Add them into blender with 1/8-1/4 cup olive oil and process until smooth like peanut butter.
Serves: 4-6 servings

- 2 medium zucchini
- ⅛-1/4 cup olive oil
- 4-6 cloves garlic
- ½ cup fresh lemon or lime juice
- ¾ cup sesame seeds
- ¾ cup tahini (SEE NOTES)
- ¼ teaspoon cayenne
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- sea salt to taste
- Place all ingredients in a food processor and process until smooth.
